Tasting Notes
Originally made to celebrate 21 years of Ace making cider in Sebastopol, Blackjack become their anniversary tradition. Made entirely from local Gravenstein apples, fermented to 8% ABV, then aged in spent Sonoma Chardonnay oak barrels. It's dry, sparkling, and more like a fine wine than your typical cider. Pairs incredibly well with grilled veggies, soup, or pasta. They plant a Gravenstein tree for every bottle sold, which is pretty cool.
